Chef Vikram Vij’s culinary journey began with formal training in Hotel Management in Austria, followed by years spent honing his craft at some of Europe’s and Canada’s most renowned establishments, including the Hotel Post in Lech, the Banff Springs Hotel, and Bishop’s in Vancouver.
In 1994, Chef Vij opened the doors to his first restaurant, introducing guests to an entirely new approach to Indian cuisine. His bold flavours and inventive spirit quickly earned national and international acclaim — including Chef of the Year and praise from The New York Times’ Mark Bittman, who called Vij’s “one of the finest Indian restaurants in the world.”
Chef Vij’s charisma and passion for food extend beyond the kitchen. Known for his warm hospitality, he is famous for personally handing out chai to guests waiting in line, turning every visit into a welcoming and memorable experience. His presence has also brought him into the spotlight on television, with appearances on Top Chef Canada, Chopped Canada, and Recipe to Riches, and he made history as the first Indo-Canadian Dragon on CBC’s Dragon’s Den. He continues to inspire young chefs and champion local producers through keynote speeches and mentorship.
Known for its artful blend of tradition and modernity, Vij’s remains true to Chef Vikram’s belief that while cuisines should evolve, they must also honour their deep-rooted heritage and culture.
Over the years, Vij’s has been recognized with numerous awards, including the Michelin Bib Gourmand (2023, 2024, and 2025) and a Lifetime Achievement Award from the Vancouver Restaurant Awards, cementing its place as a true culinary landmark.
